El Capricho anchovies are fishing from the Cantabrian Sea, using exclusively one Anchovie type, Engraulis encrasicolus, the most appreciated one for its tasty flavour. Elaboration processes like ripening, blanching, cutting, oiling are made with the best quality raw materials. This handmade product is elaborated in Santoña, province of Cantabria, Spain, a place of seaworthy tradition and one of the most important Anchovies producers of the Cantabrian Sea.
El Capricho anchovies owns Cantabria Food Quality Stamp, which certifies highest quality standars, to become one of the best Cantabria sea products. Salt maturation lasts between 12 and 18 months, that eliminates fat and make the anchovy get an intense taste and smell, uniform color and extraordinary texture and flavour.
Anchovies are exposed to maximum spin that gives them its smooth appearance, that is the reason why Anchovies don't present excessive salting, just 7,3 grams of salt per 100 grams, giving them its high quality. Intense flavour doesn't means salty taste.
Cleaning process is a handmade work, by hands with a lot of years of experience working each anchovy selectively, that means fewer daily production but higher quality.
Anchovies maturation is made with salt and olive oil, that is the reason why final product get its consistency, firm and elastic soft texture with very juicy taste. They must be kept cold between 5º and 15ºC. Consume them not longer 12 months manufacture date.

Tempranillo is the grape variety present in this wine it has been selected carefully from chosen place of La Rioja Alta, in the town of Fuenmayor.
After the grape selection, the traditional method of alcoholic fermentation is using as previous step to the second fermentation, malolactic. The wine is keeping in small stainless steel tanks for decanting naturally before bottling.
Cherry red colour with garnet tones. This wine exhibits aromas of ripe fruit, sweet, spices and coffee on the nose. On the palate it is savoury, fruity and with great harmony, polished tannins and a long finish.

La Rioja Alta, in the town of Fuenmayor, is the place where the diferent varieties of grapes that are present in this wine have been selected: Tempranillo, Graciano and Mazuelo.
After selecting the best bunches, smalls with loose and small grain, the alcoholic fermentation is carried out at a controlled temperature in stainless steel tanks of small dimensions, in order to achieve the maximum expression of aromas. After a period of maceration, the malolactic fermentation takes place as previous step to the ageing. The wine is aged for 12 months in American oak barrels to complete the rounding process in the bottle for another six months.
Attractive cherry red colour with garnet reflections. Aromas of candied fruit, spicy and toasted. Elegant and well balanced on the palate, where ripe fruit and spicy notes of the aging process are present.
The perfect accompaniment to a wide variety of meats, cheeses, roasts and starters. Best served at 16ºC. Is recommended opening half-hour before consumption.

Afterwards, the maceration process is carried out. And finally, once the wine has totally undergone malolactic fermentation it is aged for 18 months in American oak barrels before rest quietly in bottle for another 36 months.
Intense red ruby colour with brick rim. On the nose, it displays aromas of fruit liqueur, spice and coffee. The palate is flavourful with balsamic and spicy character, with the smoothness typical of classic wines Rioja Crianza and with a long and lively finish.
Perfect with red meats, game, mature cheese, roasts and stews. Best served at 17ºC. Recommended opening a half hour before consumption.

After passing through the sorting table, the alcoholic fermentation takes place for 15 days. Then, the wine is racked to another tank by carrying out the malolactic fermentation. During the first year, underwent racking every three months as a previous step to its aging in American oak barrels, of 5 to 10 years old. Once completed the ageing process in barrels during 4 years, the wine is bottled and the bottles are placed horizontally in wooden crates of 500 bottles each, where it remains a minimum of two years.
Garnet colour with cooper rim. On the nose, it displays elegant aromas of dates, spices and tobacco. In the mouth it is tasty, fresh, with round and well structured tannins and long finish. Chocolate and vanilla on the palate.
